Easy Spaghetti Squash with Caramelized Kale & Walnut Cream Sauce

Nutritious recipe for sober recovery

This dish is packed full of so many nutrients & antioxidants its a powerhouse for Sober Nutrition. Walnuts contain valuable and rare nutrients not found in many other food sources, including tannin, tellimagrandin & the flavonol morin. These antioxidant & anti-inflammatory phytonutrients have been linked with a decreased risk of breast cancer & prostate cancer. This magical nut is also known for boosting memory.


Spaghetti squash is a winter vegetable rich in vitamins, minerals, and antioxidants. Due to its low calorie and high fiber content, it may aid weight loss and digestive health.


Green leafy Kale is rich in antioxidants & high in calcium. It's also a good source of immune-boosting vitamin C, vision-boosting vitamin A, and vitamin K, essential for blood clotting & bone nourishment. Flavanoids in kale have been shown to have strong antioxidant & anti-cancer properties.


 

INGREDIENTS

  • 1 cup walnuts

  • 1 large spaghetti squash

  • 5 tablespoons olive oil, divided

  • Sea salt and black pepper to taste

  • 1 large yellow onion

  • 1 bunch lacinato kale

  • 1/2 cup vegetable stock

  • 1 bunch fresh basil

METHOD

  • Soak walnuts in filtered water for 4 hours or overnight.

  • Preheat oven to 350°F.

  • Rinse, pat dry, and cut squash in half. Remove seeds and rub with olive oil, sea salt, and pepper. Lay skin-side up on baking dish and bake for 30 minutes or until fork tender.

  • Scrape out “spaghetti” with spoon and set aside.

  • Dice onion and caramelize in 2 tablespoons olive oil over medium heat for 5 minutes.

  • Rinse and pat dry kale. Remove leaves from stalks. Slice and add to pan. Allow to cook for 5 minutes. Season with salt and pepper.

  • Transfer soaked walnuts, olive oil, sea salt, black pepper, and vegetable stock to blender. Blend until smooth, adding more stock as needed.

  • Layer caramelized onions and kale over squash, then top with walnut cream sauce. 9. Garnish with fresh basil.
